So it’s the first week of summer break and that’s not always easy. Getting out a of routine and into a non-routine (truth!) is hard!! For the mom and kids, right?? So I’ve been trying to keep them busy and yesterday, my oldest asked if we could bake cookies. To which I replied, yes!! But then realized I didn’t have any butter. So we searched Pinterest, and she found a recipe I had saved for healthier sugar cookie bars…which is exactly how these no bake sugar cookie bites were invented!
All 3 of my kids LOVED helping me make these. They liked rolling them into the balls, but the best part of course…the sprinkles. I let them go to town! And they are totally optional if you choose not to use them. But I think they look pretty festive and fun to me!
They are good to eat as is, but better chilled. They firm up a bit and the butter extract truly makes them taste like a sugar cookie. Use your favorite protein powder, mine is Shakeology and I’m obsessed with the new Vegan Vanilla flavor. To me, it tastes like cake batter so it was perfect for these treats!! Enjoy!
