21 Day Fix Meal Plan ~ Country Heat Week 2

I started Country Heat last week and flew by the seat of my pants with my meal plan. This week it’s time to take action and go ALL IN!! The truth is, I was skeptical of this program…for ME. I was nervous to stop using weights! But this first week, my legs and abs were SORE. Pleasantly surprised by the changes I’m seeing.

Here is the plan I am following this week.  Each color represents a different color coded portion control container (more info on the 21 Day Fix meal plan and my upcoming challenge group at the bottom of this post).

I am following the 1800-2099 calorie bracket.  I am on the maintenance plan and am not eating at a deficit.  You will need to figure out the bracket that is right for you.  And if you are not already actively working with a Beachbody coach and you need help getting started, simply create a FREE Beachbody account with me as your coach HERE!

Here are a few recipes from my 21 Day Fix meal plan this week:

Avocado Chipotle dressing

¼ c water
5 tbsp EVOO
3 tbsp lemon juice
1 medium avocado, cut into chunks
1 canned chipotle chile in adobo sauce, cut into chunks, with 2 tsp of the sauce (usually found in the Hispanic foods aisle)
1 clove garlic, coarsely chopped
1 tsp sea salt

Place all ingredients in a blender or food processor and cover. Blend until smooth.
