Let me just say…OMG. I didn’t set out to make something so decadent, but that’s exactly what this chocolate peanut butter banana baked oatmeal is. AMAZING. An awesome treat that won’t leave you feeling totally guilty – and in fact can be worked into your meal plan if you are following the 21-Day Fix…whaatttt???
It brings me great joy when I make something like this and my kids cannot get enough. I mean the peanut butter, bananas, chocolate…what’s not to love? Sweetened only with coconut sugar and honey – and of course the chocolate chips. Which get so melty and gooey. YUM YUM YUM!!! Almost more of a dessert than a breakfast, but I’ll let you decide that for yourself.
I store leftovers in the fridge and reheat – or not. I’ve been sneaking bites with a fork straight out of the fridge as well. I have kind of an obsession with all things oats (as you may or may not have realized by the posts on my blog). And this combination of flavors is literally to die for! Also, if you are looking for more of an every day breakfast, you could leave out the chocolate chips and then it wouldn’t be considered one of the “treats” on the 21-Day Fix (and count as 1 yellow). I do love that it makes enough – and is pretty enough – for a crowd.
This chocolate peanut butter banana baked oatmeal makes a great brunch recipe…
Preheat oven to 375 degrees. Spray an 8 x 8-inch baking pan (or pie dish) with non-stick cooking spray and set aside.
In a large bowl, mix the oats, coconut sugar, cocoa powder, baking powder, cinnamon, salt and half of the chocolate chips.
In another bowl, add the milk, egg, peanut butter, honey, vanilla extract and 2 of the bananas, mashed. Whisk to combine. Add the oat mixture to the baking dish and pour the milk mixture over the whole thing. Sprinkle the remaining chocolate chips on top. Top with the remaining banana, sliced. Bake for 30-40 minutes or until the top is golden brown and the milk has set.
