I struggle as much as the next mom to get my kids to eat healthy. My husband and I eat really well but my 6-year old and 4-year are SO picky!! My 22-month old, not so much. She’s my best eater…avocado, feta, veggies you name it! Anyway, I was feeling at a loss about what to make the kids for dinner one night – you know, something they would actually eat?? And then I thought, duh…chicken nuggets. But baked chicken nuggets – and boy are they yummy!
A really good flavor and super simple to make. Of course they wanted to dip them into ketchup and barbecue sauce…but beggers can’t be choosers I suppose. I actually dipped mine in the Honey Mustard Dressing from the 21-Day Fix Cookbook, Fixate. SO GOOD!
Preheat oven to 450 degrees, spray a baking sheet with non-stick cooking spray and set aside. In a medium bowl (or a ziplock gallon size bag), combine the diced chicken, olive oil, and all the seasonings (through the cayenne) and toss to combine so all the chicken is coated. Add the bread crumbs and Parmesan to the bowl and toss again to coat.
Dump the chicken on the baking sheet, spread evenly across the pan and bake for 8 minutes. Flip the pieces and bake for 8-10 more minutes or until coating is browned and crispy. Serve immediately with your favorite dipping sauce.
