Cucumber Tomato Avocado Salad

I love this summery, fresh salad. And even though I would love nothing more than to experience some fall-like weather, it’s still pretty hot here in the South and it may not cool down for quite a few more weeks. In the meantime, I’ll keep enjoying some of my favorite summer foods – like this cucumber tomato avocado salad. I served it as a side dish to turkey burgers on the grill. Yum!

So easy to make! In the recipe, I stated to use Roma tomatoes but as you can see in the pictures, I actually used little orange Zima tomatoes. They are so sweet and delicious! Use your favorite – cherry, grape, beefsteak, etc.

You’ll also see that you can substitute the fresh cilantro for dill or your favorite herb. The dressing could not be any easier and the avocado, when stirred together, even makes this salad a little creamy. Cucumber Tomato & Avocado Salad
2-3 Roma tomatoes
1 English cucumber
1/2 medium red onion, sliced
2 avocados, diced
2 Tbsp extra virgin olive oil or sunflower oil
Juice of 1 medium lemon (about 2 Tbsp)
1/4 cup (1/2 bunch) cilantro, chopped*
1 tsp sea salt or 3/4 tsp table salt
1/8 tsp black pepper
*Note: if you aren’t keen on cilantro, fresh dill is a good substitute

Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.

Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving, toss with 1 tsp sea salt and 1/2 tsp black pepper.
